&lt;ol>
&lt;li>Lightly score the skin of the tomatoes with a knife.&lt;/li>
&lt;li>Blanch the tomatoes in hot water for a short time, then peel them.&lt;/li>
&lt;li>Quarter the tomatoes and place them in a mixing bowl or pot.&lt;/li>
&lt;li>Add the lemon juice, gelling sugar, chopped chili, and chopped garlic.&lt;/li>
&lt;li>If using, add coconut oil to reduce foaming while cooking.&lt;/li>
&lt;li>Bring everything to a boil and cook for about 20 minutes, stirring often.&lt;/li>
&lt;li>Skim off any foam if needed.&lt;/li>
&lt;li>Check the texture: the jam should thicken nicely as it cooks.&lt;/li>
&lt;li>Pour the hot jam into clean screw-top jars and close immediately.&lt;/li>
&lt;li>Let the jars cool completely.&lt;/li>
