A vibrant spicy tomato jam made from ripe tomatoes, lemon juice, gelling sugar, and chili.

Ingredients

  • 1000 g ripe tomatoes, peeled and quartered
  • 20 g lemon juice
  • 500 g 2:1 gelling sugar
  • 1 teaspoon coconut oil
  • 4 garlic cloves, finely chopped
  • 1 chili, finely chopped or to taste

  1. Lightly score the skin of the tomatoes with a knife.
  2. Blanch the tomatoes in hot water for a short time, then peel them.
  3. Quarter the tomatoes and place them in a mixing bowl or pot.
  4. Add the lemon juice, gelling sugar, chopped chili, and chopped garlic.
  5. If using, add coconut oil to reduce foaming while cooking.
  6. Bring everything to a boil and cook for about 20 minutes, stirring often.
  7. Skim off any foam if needed.
  8. Check the texture: the jam should thicken nicely as it cooks.
  9. Pour the hot jam into clean screw-top jars and close immediately.
  10. Let the jars cool completely.

Tomato jam can also be flavored with cinnamon, mace, star anise, thyme, or cloves.

For a milder version, use less chili or remove the seeds first.

It pairs especially well with cheese, roasted meats, and bread.
