These sourdough chicken tortilla wraps are next-level comfort food: elastic homemade wraps, juicy chicken thighs, fresh salsa, and a creamy tangy sauce.

  • flour, type 500 or all-purpose
  • water
  • sourdough starter
  • salt
  • olive oil
  • 1 kg boneless, skinless chicken thighs
  • black pepper
  • marjoram
  • smoked paprika, preferably Pimentón de la Vera
  • cherry tomatoes, halved or quartered
  • 1 red onion, finely diced
  • fresh garlic, minced
  • fresh basil leaves
  • fresh thyme leaves
  • fresh orange juice
  • sour cream
  • chili flakes or hot sauce

Prepare the sourdough tortillas Link to heading

  1. Prepare a simple sourdough flatbread dough from flour, water, sourdough starter, a pinch of salt, and a splash of olive oil.
  2. Let the dough rest until relaxed and easy to roll.
  3. Divide the dough into 12-13 equal pieces and shape them into small balls.
  4. Let the dough balls rest again before rolling.

Bake the chicken Link to heading

  1. Coat the chicken thighs with olive oil, salt, black pepper, marjoram, and smoked paprika.
  2. Place the chicken on a baking tray lined with parchment paper.
  3. Roast using the oven grill function until the chicken is cooked through and has a nice dark char on the edges.
  4. Set the chicken aside on a cutting board to rest.
  5. Save the golden pan juices from the baking tray, this is basically your third sauce.
  6. Shred or slice the chicken into bite-sized pieces.

  1. Add the cherry tomatoes, red onion, garlic, basil, thyme, salt, and black pepper to a bowl.
  2. Add a squeeze of fresh orange juice.
  3. Mix well and let the salsa sit for a few minutes so the flavors come together.

For hot summer days, this is best cooked outside over real charcoal embers. But for those of us living the apartment life, a hot oven grill function does the job beautifully.

The sourdough starter gives the tortillas great elasticity, so they roll nicely without breaking or cracking.

Chicken thighs are ideal here because they stay juicy and bring more flavor than chicken breast. And do not throw away the pan juices, they are the hidden bonus sauce that pulls the whole wrap together.

Fermented goat’s milk works beautifully instead of sour cream if you can find it.
