
Krumšova šalata s tikvinim oljon is a traditional Prekmurje potato salad made with potatoes, onions, apple cider vinegar, and rich pumpkin seed oil.
Ingredients
- 600 g potatoes
- 100g onions
- salt
- pepper
- pumpkin seed oil
- apple cider vinegar
- optional cooked beans

- Cook the potatoes in their skins until tender.
- Let the potatoes cool slightly, then peel them.
- Slice the potatoes into rounds and place them in a bowl.
- Thinly slice the onions and add them to the potatoes.
- Season with salt and pepper.
- Add a generous amount of pumpkin seed oil.
- Dress with apple cider vinegar and gently mix everything together.
- Let the salad rest for a little while before serving, so the potatoes can absorb the dressing.
- Optionally, add cooked beans, although they are usually not part of the classic version.

If you ask a random housewife for advice on potato salad, you might get three strict rules: only potatoes and onion, nothing else; prepare the marinade by reducing broth; and, for heaven’s sake, never use any oil other than sunflower oil, even olive oil is already too strong. 😂
In Prekmurje, we do not pay too much attention to that.
This version contains plenty of pumpkin seed oil, which brings a deep, nutty flavor, and the dressing is simple, no broth, no cooking, no complications.
In the Prekmurje dialect, this dish is called Krumšova šalata s tikvinim oljon, meaning potato salad with pumpkin seed oil.
As a bonus, you can add beans, but in the classic krumšova šalata they are usually not included.
