Krumšova šalata s tikvinim oljon is a traditional Prekmurje potato salad made with potatoes, onions, apple cider vinegar, and rich pumpkin seed oil.

Ingredients

  • 600 g potatoes
  • 100g onions
  • salt
  • pepper
  • pumpkin seed oil
  • apple cider vinegar
  • optional cooked beans

  1. Cook the potatoes in their skins until tender.
  2. Let the potatoes cool slightly, then peel them.
  3. Slice the potatoes into rounds and place them in a bowl.
  4. Thinly slice the onions and add them to the potatoes.
  5. Season with salt and pepper.
  6. Add a generous amount of pumpkin seed oil.
  7. Dress with apple cider vinegar and gently mix everything together.
  8. Let the salad rest for a little while before serving, so the potatoes can absorb the dressing.
  9. Optionally, add cooked beans, although they are usually not part of the classic version.

If you ask a random housewife for advice on potato salad, you might get three strict rules: only potatoes and onion, nothing else; prepare the marinade by reducing broth; and, for heaven’s sake, never use any oil other than sunflower oil, even olive oil is already too strong. 😂

In Prekmurje, we do not pay too much attention to that.

This version contains plenty of pumpkin seed oil, which brings a deep, nutty flavor, and the dressing is simple, no broth, no cooking, no complications.

In the Prekmurje dialect, this dish is called Krumšova šalata s tikvinim oljon, meaning potato salad with pumpkin seed oil.

As a bonus, you can add beans, but in the classic krumšova šalata they are usually not included.
