These Mediterranean pesto skewers are colorful, simple, and perfect as a small appetizer, snack, or party bite.

Ingredients

  • 60 g Parmesan, in pieces
  • 30 g pine nuts
  • 2 garlic cloves
  • herb mix: basil, rosemary, oregano, thyme, pepper, salt
  • 80 g olive oil
  • 300 g mozzarella balls
  • 1 bunch basil, stems removed
  • optional 300 g cherry tomatoes
  • optional green olives

  1. Place the Parmesan, pine nuts, garlic, and herb mixture into a mixer or food processor.
  2. Chop everything finely.
  3. Add the olive oil and mix until creamy.
  4. Transfer the pesto to a larger bowl.
  5. Add the mozzarella balls and toss them gently in the pesto.
  6. Refrigerate for about 2 hours so the mozzarella can absorb the flavor.
  7. For the basic version, assemble the skewers by alternating mozzarella balls and basil leaves.
  8. For a more colorful version, add cherry tomatoes and green olives to the skewers.
  9. Serve with white bread.

You can use shish kebab skewers for larger portions or toothpicks for small party bites.

The basic version is very simple: pesto-marinated mozzarella balls and fresh basil leaves. Cherry tomatoes and green olives are optional, but they make the skewers more colorful and bring extra Mediterranean flavor.

If you want to make the skewers a little spicy, you can add a pinch of chili powder to the pesto.

Instead of a dried herb mix, you can also use fresh arugula for a slightly peppery version.
