This Makedonska pogača comes from an old family cookbook and is a rustic savory bake that is best served warm.

Ingredients

  • 150 g sheep cheese
  • 3 eggs
  • 1 cup sour milk or kefir
  • 1 cup of olive oil
  • 1 baking powder sachet
  • 15 tablespoons flour
  • fat for greasing the baking tray (you can also use baking paper)
  • salt

  1. Crumble the cheese into a bowl.
  2. Add the eggs, sour milk, oil, baking powder, flour, and a little salt.
  3. Mix everything into a soft batter or dough.
  4. Grease a baking tray well and spread the mixture into it. (You can also use baking paper if you prefer.)
  5. Bake in a preheated oven until the pogača is golden and cooked through.
  6. Serve warm, ideally with sour sheep milk if you have it.

The original recipe uses sour milk and baking powder, but I sometimes make it with kefir instead of sour milk. Another variation I have tried is replacing the baking powder with 100 g of sourdough starter, which gives it a slightly different character.

It is a humble but comforting bake, simple ingredients, old-school method, and best enjoyed warm.
