
Breaking tradition in the best way possible. Chocolate dough Potica: because every classic deserves a remix.
Potica is one of the most recognisable traditional Slovenian pastries. It is made from thinly rolled yeast dough, spread with different fillings, rolled up, and baked in the characteristic potičnik, a round baking mold with vertical ridges and a cone in the middle.
The name comes from povitica, from the verb poviti, meaning to wrap or roll up, which describes the preparation well. The most famous and officially protected version is walnut potica, which has been recognised in the EU as a Guaranteed Traditional Speciality since April 2021.
Other well-known fillings include tarragon, tarragon with cottage cheese, raisins, and walnut with raisins. There are also savory versions, such as ocvirkovka and špehovka.
Potica has a long history reaching back to the Middle Ages, with early written mentions in the works of Primož Trubar and Janez Vajkard Valvasor. Today it is considered a national symbol of Slovenian cuisine and is often called Slovenia’s culinary ambassador.

There is something special about a pastry that carries so much history, identity, and celebration in such a small spiral of dough.
